There’s nothing quite like a steaming bowl of mussels, cooked in a rich garlic, butter, and white wine sauce. Perfect to share with family, friends, or to enjoy as a comforting meal with crusty bread. 🥖✨
Ingredients:

1kg Newcastle fresh mussels (cleaned & debearded)

2 tbsp olive oil
-
3 tbsp butter
-
4 cloves garlic (finely chopped)

1 small onion or shallot (finely diced)

1 cup dry white wine (or chicken stock)

2 tbsp fresh parsley (chopped)
-
Juice of ½ a lemon
-
Salt & pepper to taste
Method:
1️⃣ Heat olive oil and butter in a large pot over medium heat. Add onion and garlic – cook until fragrant.
2️⃣ Pour in white wine (or stock), bring to a simmer, and season with salt & pepper.
3️⃣ Add mussels, cover with a lid, and cook for 5–7 minutes until shells open (discard any that don’t).
4️⃣ Finish with lemon juice and sprinkle with parsley.
5️⃣ Serve hot with crusty bread to soak up the delicious sauce! 🥖🍋
